Oleomargarine has exactiy the same ford vaiue as butter, nd why, when butter is the highest in our histcry, such a valuable subsditute should be shut-out or subjected to the attempt, is difficuit to understand. ‘"At a time when butter has been’selling up to 70 cents per pound, and is even now at twice its normal price,”’ says the Mont- real Journal of Commerce, "'it Is amaz- ing to find that there are men in Cana- da who ask the revival of the laws pro- hihitine the use of oleomracarine. It took a world war to break: down in Canada a vrohibition which was excu- able in its dav, but which had outlived is usefulness, When, nmany years ago, the sale of oleomargarine was prohibi- ted, the article wgs not favorably known. There was a general opin- jon that by the unrestricted sale of it the public were imposed nn and the reputa- tion of Canadian butter was damaged. Uuder such conditions the enactment of laws forbidding the manufacture, sale or importation of oleomargarine was in harmony with the public opinion of the country. In the course of time oleo- margarine was much improved in character, and became a recognized ar- ticle of ¢commerce in all countries except Canada. In England. where pure food laws are rigidly administered, oleomar: garine eame inte wice use as a substi- tute for butter, not s good as butter, but nevertheless as wholesome as well as a cheap article. In Canada. however, ‘bafore the war, there was no demand for it. Our Canadian pecple used good butter as long as & was within a reas- onable price. Hence, nere was no de- mand for the rempval of the prohibicon of oelomargarine, though Canada was the only country tiat danted it. When the price of but er seoced to double the ordin- ary figure, that agticle became a luxury beyond the reachfaf the ordinary house- uolder.
